Fumonisins are toxins produced by several species of Fusarium molds, such as Fusarium verticillioides which occur mainly in maize (corn), wheat and other cereals. Fumonisin B1 is hepatotoxic and nephrotoxic. fumonisins are able to inhibit sphingosine-sphinganin-transferases and ceramide synthases and are therefore competitive inhibitors of sphingolipid biosynthesis and metabolism. Fumonisin is hydrolysed by Sphingopyxis macrogoltabida FumD. It is used as enzyme-basedfeed additive intended to degrade fumonisin mycotoxins found as contaminants in feeds for growing pigs.
