General

Gallic acid (also known as 3,4,5-trihydroxybenzoic acid) is a trihydroxybenzoic acid with the formula C6H2(OH)3CO2H. It is classified as a phenolic acid. Alkyl gallates (A-GAs) are the condensation products of phenolic acids and fatty alcohols, which have been extensively utilized as antioxidants in lipid-based food products (predominantly edible oils). Especially, propyl gallate (G-C3:0), octyl gallate (G-C8:0) and dodecyl gallate (G-C12:0) are antioxidants authorised as a food additive in Europe
